What You Need:
Cake mix of your choice. (I used strawberry and white for these Valentines Cookies)
1 Stick of Melted Butter.
1 egg.
Sugar for coating.
Preparation:
Combine all 3 ingredients: cake mix, egg, and butter in a mixing bowl.
This should form one large ball of dough.
Place the dough into the fridge for about 10 minutes to cool and stiffen.
**(if you are using a specific cake mix that includes pudding in the mix, you will need to go just shy of one stick of butter. using too much butter for this type of cake mix will cause the dough to be too sticky. measure carefully)**
While the dough is cooling in the fridge, preheat the oven to 300 degrees F.
Once the dough has cooled for about 10 minutes, take it out of the fridge.
This dough is perfect to roll out and use with cookie cutters, or you can simply roll them into discs with your hands like I did. However you choose to do this step, be sure to make your cookies about 1/2 inch in thickness. (too thick will cause cake-like cookies).
Before placing your cookies onto an ungreased cookie sheet, coat them completely in granulated sugar. Don't skip this step, it makes the cookies 10 X better!
Bake for 8-10 minutes at 300 degrees F.
Let them cool on a cooling rack before decorating or eating.
**Tip!: For extra dense and chewy cookies, use a spatula to gently press down on the cookies while they are still hot to touch.
